Sake Flavour Profiles
Nihonshu-do
The number found on a sake label preceded by a plus or minus refers to the ratio of , SMV calculates a sake’s specific gravity (relative density) at 15ºC based on a modified Heavy Baume scale. (A value of zero compares to the gravity of pure water at 4ºC.)The SMV measures how much sugar and alcohol is left in the sake after brewing. It works on a balanced scale from -15 to +15.
Thus, as a general rule, this number can be used to determine whether a sake will be dry or sweet, with numbers on the minus scale being sweeter and numbers in the plus referring to drier varieties. However, it is important to note that this is not the only factor that affects sake flavour; the acidity, or san-do, is also crucial in developing the flavour profile of nihonshu.
San-do
San-do refers to the acidity levels in a given nihonshu. Hearing “acidity” likely creates the image of sourness,but in sake, acid expresses the sharpness of the taste.
Acid intensifies the flavour, so even if two varieties of sake have the same sake content, the one with higher acidity will taste drier and stronger.
Kunshu
A clear nihonshu characterised by a gorgeous, fragrant aroma. Sake of this type has a refreshing taste with a good balance acidity balance. Although it is has a strong fragrance, the finish is crisp, making it exceptionally easy to drink. Popular with beginners and experienced sake drinkers alike.
Jukushu
Sake of this type can be easily recognised for their richer colour, ranging from a pale yellow to rich amber. Jukushu sake have a robust aroma and complex flavour that lingers on the palate. Best paired with foods with strong, distinct flavours.
Soushu
Soushu is characterised by a understated and refreshing scent. Light and smooth on the palate with fresh, often fruity acidity. A refreshing drink with a short and sharp aftertaste.
Junshu
A pale yellow sake with a smooth fragrance. The sweetness and sour notes are in perfect harmony with the pleasant bitterness that comes in the aftertaste. Junshu sake pairs excellently with a wide range of foods. It also can be enjoyed at a wide range of temperatures.
